The chilling of freshly harvested meat has great impact on the meat’s overall quality. Therefore, precise temperature control of the chillers used is of utmost importance.

The importance of chilling meat starts immediatley afer the harvest, and continues throughout the entire process. The amount of muscle retraction left in the animal’s muscles after slaughter has a direct relationship to the meat’s level of tenderness. For example, within the first 24 hours after beef is slaughtered, rigor mortis develops in the animal’s muscle tissue. The rates of postmortem chilling can impact the development of rigor mortis, which is accompanied by rapid declines in PH levels. Low chilling temperatures will cause these conditions to develop slowly, while high chilling temperatures will cause them to develop more rapidly, resulting in tough meat.

It is important to "maintain and control" cool temperatures from harvest to finished product. Finding the best cooling solution to remove heat from intensifier pumps, high flow pumps, jacketed vessels, meat massagers, waterjet cutting, marinade processes, hyperbaric chambers or brine injection processes is the cornerstone to reducing downtime, increasing cycle time, and providing high-quality end products.
